My friend made this cake recipe for her sons birthday party knowing that my son could have it....so sweet it made me cry. The cake was amazing! She gave me the extra cupcakes and I would never have known they were dairy free if she hadn't had told me! I am so excited to find a good tasting recipe that everyone wouldn't mind eating at the next party!

The Icing she used was Vanilla Silk Frosting:
3 c confectioners sugar
1/2 c soy margarine
3 Tbs water
1 tsp vanilla
